Hello Poets! Welcome to May! April was a calm month at the White Rabbit. Did you read the amazing Featured Poets? We were so honored and blessed to have , , and ! the links are listed below the newsletter, if you haven’t, please take a look. Amazing writing there!

May will bring a few changes to the White Rabbit. We will be encouraging more community involvement. Want to write a poetry prompt? We are here for it! Want to write a poem? Please do! Want to curate a poetry event in June? We’d love to hear from you! Community works best when we all participate and I’m sure many of you have wonderful ideas that should and can be shared!

May also brings May Flowers the prompt event to grow our garden. A new subsection run by the wonderful , and much more. Please also reach out if you are interested in being a Monday poet. We are accepting poets for the last of June and July. Thank you so very much for being here! Happy Writing!

Orange Blossom Tea to Fight Stress and Anxiety - It's Never Not Teatime.

Traditional Scones

Makes 12

Ingredients

2 cups all-purpose flour
2 tablespoons sugar
2½ teaspoons baking powder
½ teaspoon salt
¼ cup cold unsalted butter, cut into pieces
1¼ cups heavy cream
1 teaspoon vanilla extract

Instructions

Preheat oven to 350°. Line a rimmed baking sheet with parchment paper.
In a large bowl, combine flour, sugar, baking powder, and salt; mix well. Using a pastry blender, cut in butter until crumbly. Add cream and vanilla extract, stirring with a fork just until combined.
Shape dough into a ball. On a lightly floured surface, knead 4 to 5 times or until smooth and elastic.
Roll dough to a 1-inch thickness. Using a 2-inch round cutter, cut scones from dough. Place on prepared baking sheet. Bake until tops are medium brown, 18 to 20 minutes. Let cool on a wire rack. Serve warm.

March was a very big month for White Rabbit Poetry Society, so we took it easy in April. March hosted World poetry Day. To celebrate our amazing Substack poets, we offered two evens: Haiku Week and Sonnet Madness. We honored Eastern poetry and introduced traditional Japanese form of Haiku and invited poets to write traditional or modern Haiku. Then we honored Western poetry by asking our poets to give traditional sonnets a try. The results were amazing! We even had a first and a sweet young lady offered a sonnet for consideration. We are proud to be her first publicly published poem!
White Rabbit welcomed to the editing team.
We posted two poetry shares, and the ever-amazing introduced sestinas. We were full of poetry pride and had some of the best showcases of talent.
Thank you to everyone who participated and a special thank you to all of our readers who make what we do worthwhile. We at the White Rabbit want to encourage everyone to write poetry, give different forms a try, reach into your heart and find your poetic spirit. Don’t be afraid to join us and write poetry!

White Rabbit Tea Table: Monthly Recipe and Tea Suggestions

Jasmine Tea- There are so many kinds, you should find one you like!

Blossoms from common jasmine (Jasminum officinale) or sampaguita (Jasminum sambac) are placed alongside tea leaves in storage or blended with stored tea, allowing the aroma to infuse. Because jasmine tea is typically made from green tea leaves, it provides many of the same powerful health benefits that you would get from drinking green tea.

Easy Madeleines

Makes about 18–24 (mini muffin size) or 12 standard madeleines

Ingredients

· 2 large eggs (room temperature)

· ½ cup (100g) granulated sugar

· 1 cup (125g) all-purpose flour

· ½ teaspoon baking powder

· ⅛ teaspoon salt

· ¼ cup (56g) unsalted butter, melted and cooled slightly

· ½ teaspoon vanilla extract

· ¼ teaspoon almond extract (optional, but lovely with jasmine tea)

· Powdered sugar, for dusting

Equipment

· Madeleine pan or mini muffin tin (nonstick, or greased and floured)

· Small whisk or electric mixer

Instructions

1. Preheat oven to 375°F (190°C). Grease your pan well with butter, then dust lightly with flour (or use baking spray).

2. Whisk eggs and sugar vigorously for 3–4 minutes until pale, thick, and ribbony (a hand mixer on medium speed makes this easy).

3. Mix dry ingredients in a small bowl: flour, baking powder, salt.

4. Fold dry into wet gently, using a spatula, until just combined (don’t overmix).

5. Add melted butter and extracts – fold in until smooth. Batter will be thick and glossy.

6. Chill batter for 30 minutes (optional but helps create the classic hump). While chilling, keep pan at room temp.

7. Fill each mold about ¾ full – a small cookie scoop or spoon works fine.

8. Bake:

~Madeleine pan: 9–11 minutes

~Mini muffin tin: 8–10 minutes

Edges should be golden and centers spring back when touched.

9. Cool 2 minutes in pan, then transfer to a rack. Dust generously with powdered sugar.

These are best slightly warm or at room temperature. Their mild vanilla-almond sweetness and tender crumb let the floral tea shine.

Tip: If you don’t have almond extract, just use 1 tsp vanilla. No madeleine pan? The mini muffin version looks like little puffy buttons. Less traditional, just as delicious.

There was an Old Man in a boat,

Who said, ‘I’m afloat, I’m afloat!’

When they said, ‘No! you ain’t!’

He was ready to faint,

That unhappy Old Man in a boat.

A Minor Infraction

When the house surrendered to sleep

and even the clock softened its breath,

I entered the kitchen

as though trespassing on sacred ground.

There, beneath the small and merciless light,

rested my son’s unopened snack.

It bore no inscription of ownership,

yet its allegiance was clear.

I stood in deliberation.

Hunger spoke first.

The wrapper answered.

Its quiet crackle

sounded louder than confession.

I ate.

I buried the evidence

with the fragile hope

that time would conspire with me.

But morning is an honest witness.

“Dad, where is it?”

In that question

fell the full weight of my authority.

I confessed.

I promised restitution.

I swore renewal.

And learned:

A father’s dignity

can collapse

over something

no larger than a handful of crumbs.

White Rabbit Tea Table: Monthly Recipe and Tea Suggestions

Rose Pistachio Tea Cookies

1 cup (227 g) unsalted butter, softened

1 cup (198 g) granulated sugar

1 egg I prefer room temperature

2 teaspoons vanilla extract

1½ teaspoons baking powder

½ teaspoon salt

3 cups (390 g) all-purpose flour

1 TBS dried rose petal add another TBS if you want very floral cookies

1TBS pistachio grinds (opt)

Oven temperature 325-350 depending on altitude
Dried rose petals for culinary use are best
Use a spice grinder to grind rose petals and pistachios sift to remove any large chunks (fine ground is good)
Cream butter sugar approx. 2-4 minutes
Add egg cream until fluffy
Add vanilla mix well
7 sift dry ingredients together with the exception of the rose and pistachio
Slowly add flour, I usually do it in thirds until well mixed and no flour or lumps are left
Add rose petals and pistachio grounds I use my hands to mix this in
Refrigerate for one hour
Line your cookie sheets with parchment paper
If you’re up and tends to run hot or your cookie sheets are dark, then put two cookie sheets together before you bake
I measure 20g on my scale for the cookies roll that section into a ball and then use a cookie press to press it down
Refrigerate cookies for 15 minutes
Bake at 325 to 350°F for 8 to 10 minutes until lightly starting to turn golden
Remove cookies from the oven and let’s sit on tray for 4 to 5 minutes before transferring to a cooling rack. If your cookies are not round use a glass (plastic will not work) to circle the edges. You have to work very quickly and while the cookies are hot otherwise, they won’t go back to a perfect circle.
Cool completely and enjoy with tea

Full Poem

I was small enough to think quiet meant kindness.

The house held its breath like it was waiting with me. Cartoons murmured mercy. Dust learned how to float without falling.

My grandmother said she was going to rest. Adults always rest before they vanish.

I stayed where I was told. That’s the first prayer you learn.

Time thickened. The clock chewed its own seconds. I counted nothing because no one taught me how.

The sound arrived without asking to be named. Not loud. Not angry. Just absolute.

The television didn’t stop talking. The walls didn’t lean in. The house kept its posture.

No one told me what that sound was, so my mind folded it into something softer. A door. A fall. A mistake that could still be undone if I stayed very still.

Children believe in reversals.

I didn’t cry. I hadn’t learned that language yet. I only felt the wrongness crawl into my bones and make a home.

When I went looking, the air was different. Metallic. Clean. Finished.

She was there but not assembled correctly. Like the person had stepped out and left the shape behind, forgetting to turn off the lights.

Her shoes were still on. That detail stayed. Politeness survives the body.

I remember thinking I had failed by continuing.

They say memory edits itself to protect the young. They say trauma blurs. They say the mind saves you by removing the sharp edges.

What it really does is erase the center and leave you circling forever.

Later, they gave it words I wasn’t invited to use. Illness. Sadness. A long time coming.

They spoke her name gently as if softness could resurrect.

No one asked what I heard. No one asked what I saw. They only told me I was lucky to be too young to understand.

Lucky things don’t wake up with their heart sprinting. Lucky things don’t fear silence. Lucky things don’t listen for echoes that never arrive.

Somewhere inside me, a room closed. A latch learned its job.

And a child learned what no one teaches directly:

That love doesn’t anchor people. That care doesn’t equal staying. That sometimes-babysitting ends without a goodbye.

Rule number one: Adults can leave the world without warning.

Rule number two: Children remain.

They always remain.

This piece is about grief and how it is labeled as something to remain quiet about or get over. Grief isn’t who we become, it’s how we react and open our minds to what comes after.

Regrets can overwhelm us. Sometimes they can even paralyze us in place, further embedding us in a cycle of regret. Reflection on our past is often necessary in order to face the present moment with power and agency, but when it begins to stunt our growth we must learn to let it go.

No matter where you are in your life’s journey, there is always more. If your past has become a cage, realize you hold the key to set yourself free from past regrets.

This is my reflection on waking to a fresh snowfall one brisk morning earlier this winter. The world is always still during or immediately after a snowfall, the kind of hush that presses in on your ears. That stillness inspired this.

White Rabbit Tea Table: Monthly recipe and Tea Suggestions

Apple Date Rosettes

Yield: 4 individual tarts

Prep Time: 30 minutes

Cook Time: 20-25 minutes

Total Time: ~55 minutes

Ingredients

For the Filling:

· 4 Medjool dates, pitted

· 1 tsp fresh lemon juice

· 2 Tbsp almond flour (or almond meal)

· 2 Tbsp apple butter

For Assembly:

· 2 large, firm apples (like Honeycrisp or Pink Lady), sliced very thin

· 1 batch of your favorite single pie crust (store-bought or homemade)

· All-purpose flour, for dusting

Equipment:

· 4 individual tart pans (approx. 4-inch diameter)

· Food processor

· Mandoline slicer (recommended) or sharp knife

· Pastry brush

· Rolling pin

Instructions:

1. Prepare the Components:

· Prep Apples: Halve and core the apples. Using a mandoline, slice them thinly (about 1/8-inch thick). Blanch apples in boiling water for 2-3 minutes until pliable. Place slices in a bowl, toss with the lemon juice to prevent browning, and set aside.

· Make Date Paste: In a food processor, combine the pitted dates, almond flour, and apple butter. Pulse until a thick, sticky paste forms. Scrape into a small bowl.

· Prep Crust: On a lightly floured surface, roll the pie crust dough to about 1/8-inch thickness. Using a bowl or cutter slightly larger than your tart pans, cut out four circles. Gently press each circle into a tart pan, trimming any excess overhang. Place pans on a baking sheet.

2. Assemble the Rosettes:

· Add Base Layer: Divide the date paste evenly among the four tart shells (about 1 heaping teaspoon each). Use the back of a spoon to spread it into a thin, even layer on the bottom.

· Create Apple Petals: Take a slice of apple, pat it dry if very wet, and place it in the tart pan so the top (skin side) extends over the edge. Place another slice slightly overlapping the first. Continue overlapping slices in a circle, working inward, to create a rose-like pattern. Repeat for remaining tarts.

· Fill Center: For the center of each rosette, roll a small apple slice into a tight spiral and place it in the middle to complete the “rose.”

3. Bake:

· Preheat the oven to 350-375°F (190°C).

· Bake the rosettes on the baking sheet for 20-25 minutes, or until the apples are softened and slightly caramelized at the edges, and the crust is golden brown.

4. Serve:

· Let tarts cool in their pans for 5-10 minutes before carefully removing. Serve warm or at room temperature. Excellent on their own or with a drizzle of caramel sauce or a scoop of vanilla ice cream.

Tips & Notes:

· Apple Selection: Firm apples hold their shape better for the rosette pattern.

· Slicing: A mandoline is key for getting uniformly thin, flexible slices that are easy to roll and arrange.

· Make Ahead: The date paste can be made and the tart shells can be shaped in the pans a day ahead. Keep covered in the refrigerator.

· Variation: Add a pinch of cinnamon or cardamom to the date paste for extra warmth.
